I know it’s Sunday, but somehow napping seemed more important this afternoon and then it was time to leave for Sunday dinner. So here’s this week’s linkup!
This Weeks Questions:
1. If you could only eat one thing for the rest of your life, what would it be?
Oooh, good question. It wavers depending on the season, so right now I’m hooked on Wacky Mac (4 color rotini) with fresh basil, fresh tomatoes, homemade mozzarella, olive oil, and fresh ground pepper. My friends want me to put chicken in it, but I like it better without.
2. What’s your guilty pleasure/comfort food?
Reese’s Peanut Butter Cup Minis. Must be eaten in multiples of four. Don’t ask why, they just do. On a truly bad day, homemade sour cherry cobbler.
3. What’s the weirdest/craziest thing you’ve ever eaten?
Growing up a special treat was rice for breakfast. I think it’s totally normal, but my friends think it’s weird. Cook the rice, then cover with hot milk, add butter and sugar. Yum.
4. What foods do you avoid at all costs?
Pears, ’cause I don’t like ’em. Onions, green peppers, fried foods, and eggs when not at home, because while not fully allergic, I have ‘food sensitivity’ issues.
5. What meal reminds you of your childhood?
Pan fried pork tenderloin. Corn soup. Rice pudding. Oh so yummy.
6. Share one of your favorite recipes and the story behind it.
I have dozens I can list here, but this is the easiest one that I can do by heart without looking. It’s homemade granola. You can eat it as a cereal with milk as well. Preheat oven to 350. In 9×13 pan bake 6 cups of oatmeal for 15 minutes. Remove from oven and add 1/2 cup dry milk, 1/2 cup coconut, 1/2 cup almonds, 1/2 cup craisins, 2/3 cup oil, 2/3 cup honey. Mix thoroughly. Bake another 10-15 minutes.
